Aetos Classic Method Extra Brut

Sparkling wine from 100% certified-organic Sangiovese grapes, entirely produced in our winery following the principles of biodynamic agriculture.
The selected grapes come from the well-exposed Collina vineyard, where vines are trained using the bush training system, and are harvested early by hand to preserve their optimal acidity and freshness. The vinification process involves gentle whole-bunch pressing and alcoholic fermentation process in stainless steel tanks, followed by in-bottle refermentation with a minimum of 24 months on the lees.
The 2016 vintage was characterised by a rainy and cool spring that made the phytosanitary management of the vineyard challenging. The typically sunny and dry Mediterranean summer allowed for optimal vine growth. The Sangiovese grapes had a slow ripening cycle, which accounts for the development of an aromatic and polyphenol-rich bouquet of rare balance and complexity.

Intense to the nose, with floral aromas and notes of white pulp fruit and blackcurrant. The mouthfeel is clean, elegant and complex with a fresh and sapid finish.
